Observed soup internal temperature of 135*F stored in walk-in unit with closed lid. Discussed with operator to remove lid for rapid cooling from 135*F to 70*F within 2hours and from 70*F to 41*F within 4hours. Operator proceeded to remove lid at time of inspection. Corrective Action: Corrected at time of inspection.
