Inspector's notes

Observed panned imitation krab mix sitting out on sushi prep counter with bottom of pan touching ice at 51*f degrees. Sushi employee stated crab remains on ice until the end of shift and used for 2 days maximum. Discussed keeping panned krab more submerged in ice to maintain 41*f degrees. Item out less than 2 hours and sent to kitchen blast chiller. Corrective Action: Corrected at time of inspection.
