Inspector's notes
Sliced cheese being held under time as control was being used after it exceed the 4hrs. PIC voluntarily discarded the cheese. Also observed un-updated time stamps for lettuce and sliced tomatoes at the sandwich makeline. Per PIC, sliced tomatoes and lettuce were stocked within 20-30minutes prior to this inspection. Reviewed with PIC and employees that when using time as a control for food safety; time stamps must be recorded as soon as product is removed from refrigeration. Adjusted times were recorded for the lettuce and sliced tomatoes. Corrective Action: Corrected at time of inspection.

Inspector's notes
Observed a small gap underneath the rear entrance doorway. Outer openings of a food establishment shall be protected against the entry of insects and rodents. Advised PIC to install a door seal / weather strip underneath prior to next routine inspection.
