Observed prep refrigerator towards the back end of the kitchen measuring with an ambient temperature of 55 degrees F. TCS foods such as cooked shrimp and beef/chicken flautas measured with an internal temperature of 53 degrees F. These items were recommended for discard. All other items in the refrigerator were recently prepped or stocked in the refrigerator. Alternative adequate refrigeration is available to operate safely. The refrigerator will not be used to store TCS foods until in good repair and able to maintain food temperatures at or below 41 degrees F. Discussed cold holding and conducting routine temperature checks.

Per Person in Charge (PIC) temperature of food items in unit was not checked today. PIC removed items that had just been stocked in cooler and brought to alternate cooler to facilitate rapid cooling. PIC removed items that have been in unit overnight to voluntarily discard. See embargo. PIC removed unit at time of inspection and ordered new unit replacement.
