Observed staff not sanitizing dishes at the three-compartment sink. When washing utensils and dishes, equipment must be washed, rinsed and sanitized. Discussed proper dish wash procedures with owner and staff. Correct sanitizer was made, and dishes were sanitized at time of inspection. Owner stated he would retrain new staff with proper dish wash practices Corrective Action: Corrected at time of inspection.
