Observed peanut butter mousse, melon fruit salad, pineapple slaw in open deep cold holding chest unit with internal temperatures ranging 49-53*F. Person in charge stated foods were prepared and placed in unit over 4 hours prior to inspection and voluntarily discarded all items. PRIORITY VIOLATION-3-501.16(A)(2) and (B) - Priority: Time/Temperature Control for Safety Food, Cold Holding.
