Observed dishes sitting in quaternary sanitizer solution in 3-compartment sink produce a strength of less than 150ppm. When sanitizing with quaternary sanitizer, solution should produce a strength of at least 150ppm every time for proper sanitation. Person in charge removed dishes, and prepared new solution at a strength of 200ppm. All dishes were re-sanitized in 3-compartment sink at time of inspection. PRIORITY VIOLATION-4-501.114 (A-E) - Priority: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- Temperature, pH, Concentration and Hardness. Quat solution observed above 500ppm using test strips. There were dishes being washed at time of inspection. Establishment did not have proper test strips to test the concentration of quat. A new solution was made and inspectors test strips confirmed proper concentration between 200-400ppm. Chemical sanitizers may be toxic if not used in accordance to FDA food code requirement. Corrective Action: Corrected at time of inspection.
