Inspector's notes

Facility has wash compartment and sanitizer compartment setup for warewashing. Employee rinsing dishes in first compartment and using as dump station. Dishes washed in middle compartment, rinsed in first compartment and then sanitized in third compartment --- warewashing to be setup as wash, rinse and sanitize, wash solution temperature to be at 110^F or above, compartments to be cleaned prior to setup of sink, Corrective Action: Corrected at time of inspection.

No backflow on the coffee and espresso machines --- provide ASSE 1022 dual check valves for the coffee and espresso machine No air gap for the drainage lines -- provide 1 inch air gaps for the drainage lines Corrective Action: Correct prior to next routine inspection.

Interior of cabinet under the handwash station damaged and in disrepair --- provide smooth surface, seal cabinet and provide means to eliminate further damage Seal around the three compartment sink worn and not fully sealed --- reseal Penetrations in the cabinets not sealed -- seal Facility has storage room in a back area that has water lines above the food storage and cement block walls --- provide trough system below water lines that are above any food and food contact surfaces. d. Concrete masonry unit (CMU), block, brick, or similar porous material walls where allowed must be sealed to acceptable nonabsorbent finish. CMU or “block”, brick, and other masonry units installed as a finish material must be free of pits, voids, cracks, depressions, and must be smooth and easily cleanable. Block walls or similar material where allowed must have an acceptable finish. Exposed, rough, unfinished cmu or block is typically not considered an approved wall finish. CMU finishes must be acceptable or filled to a minimum of 3 mils (U.S. industry thickness of paint expressed in mils, one mil equals 1/1000th of an inch) or higher as determined by the Department representative
