Observed portioned red salsa in ramekins inside a two-door standing refrigerator dated 5/25-6/25 at time of inspection. Per PIC, their internal policies dictate that commercial bottles of salsa may be held for 1 month. However, once the salsa is portioned out and prepped for service, a 7-day date-marking requirement must be adhered to. Discussed proper date-marking procedures with PIC. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes
Sliced tomatoes, sausage bits, shredded cheese observed with an internal temperature range of 48-53*F while being cold held inside the make-line unit across from the grill. The ambient temperature of the unit was 50*F at time of inspection. PIC stated that all TCS products inside the unit were stocked for lunch service (1.5hrs prior to inspection) and will be discarded after lunch. PIC advised staff to discard all products after meal service and they stated that they are going to implement time as control for products inside that unit. Discussed the time as temperature control policy and the requirement to submit a written policy for review and approval. Corrective Action: Corrected at time of inspection. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below.

Several food items (tuna salad, diced cooked potatoes, pasta, diced tomatoes, lettuce, etc) in over stocked reach-in refrigerator ranging 45-60*F. Person in charge stated foods were just prepped, and began the cooling process within 2 hours prior to inspection. All cooling foods should have lids removed so that the proper temperature can be reached in the appropriate time (2 hours to reach 70*F from 135*F, and 4hours to reach 41*F from 70*F).
