Observed rice and beans in three door reach in cooler at an internal temperature of 44-45*F. Cold hold of food to be 41*F or lower. As per the person in charge the rice was prepared the night before and cooled. Stored in reach cooler longer than 8 hours. Advised staff to cool foods loosely covered and follow correct cooling practices. (135 - 70 within 2 hours and than from 70 - 41*F within an additional 4 hours), and to use metal stem thermometers to verify cold hold temperatures Corrective Action: Corrected at time of inspection.
