Observed Quat chemical sanitizer, ready for use, in the three-compartment sink measuring above 500 PPM. Alerted the Person in Charge who diluted the sanitizer to the correct concentration at time of inspection. Kitchen staff to test sanitizer concentration and ensure it is in the appropriate range each time it is hand dosed. Reeducated staff on the recommended range of use for quat (150-400 PPM) and discussed toxicity concerns when sanitizers are used above the recommended range. Corrective Action: Corrected at time of inspection.
