Observed raw chicken in walk in cooler at 48*F. Chicken was placed in freezer to cool. Observed yellow rice, white rice, hummus in walk in cooler at 48*F. Items were embargoed and discarded. Cold hold of food to be at 41*F or lower. Advised staff that a metal stem thermometer is to be used to verify food temperatures through out the day. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed walk in cooler with an ambient temperature of 49*F. Equipment must be maintained to hold food at 41*F or lower. During site visit it was observed that the fans and condenser in the walk in cooler on site had ice build up at the back. Operator contacted repair company to repair. TCS foods prepared the day before were discarded - see embargo list. The remaining items in walk in cooler included beverages and non prepared produce. Reinspection to be completed on 9/18/2025 to verify unit has been repaired. If not repaired - license will be suspended until repaired. Corrective Action: Correct prior to re-inspection.

Provided time as control paper work via email to assist with monitoring. Advised staff to update paperwork every shift. Pizza and other baked items with meat and cooked vegetables were prepared at 9am and to be discarded at 1pm. Discard time added to trays. Corrective Action: Corrected at time of inspection.
