Observed TCS (time temperature control for safety) foods with internal temperatures between 52F -59F in the reach in cooler by the back door. TCS foods included milk, cheese cake, hummus and various other egg based spreads. The person in charge stated the items had been stocked into the reach in cooler 3.5 hrs ago and moved the food items to freezer for rapid cooling.

Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Predefined Comment: All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Observed reach in cooler with minimum ambient temperature of 53F as measured by inspector min/max thermometer. Establishment's internal ambient thermometer displayed a temperature reading of 52F and the exterior temperature display on the reach in cooler displayed a temperature of 37F. The person in charge discontinued used of the reach in cooler for cold holding TCS foods and placed a work order for service at the time of inspection.
