Observed a pan of mac n cheese cooling in the reach in reach in cooler at 70-75*F. Per manager the mac n cheese was cooked and had been cooling for about 4 hours. Because the mac n cheese was above 70*F after 2 hours of cooling it was embargoed. Discussed proper cooling methods.

In the cook and hold unit closest to the cooler, observed pans of beans, pulled pork, Cooked tips, and mac n cheese all at 125-128*F. All foods were finished cooking and placed to hold around 3 hours prior. No temperatures were taken before inspection. Because the foods were in the unit for longer than 2 hours and were below 135*F they were embargoed.
