Inspector's notes

Observed ice buildup in the freezer unit across from the three-compartment sink. Spoke with PIC and they stated that a repair technician was scheduled to come look at the unit this week. Gasket on the right door was not sealing correctly. Ensure the freezer is repaired and ice buildup is removed. All equipment must be maintained in good repair at all times. Repair all equipment to a state of good repair prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.

Cooked chicken, cooked beef, cut lettuce, and cut tomato were cold holding in coolers in the kitchen without date marks. Kitchen associate stated that the items were prepared on Monday. Items were date marked at the time of inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1).
