Inspector's notes
Observed cookie frozen yogurt base in well of soft serve machine with an internal temperature ranging from 42-49°F. Person in charge stated frozen yogurt base had been in the unit over night and not used today. Frozen yogurt base contains dairy and container states to keep refrigerated. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.
