Inspector's notes

Observed the establishment's only in unit prep cooler running with an ambient air temperature of 69.4*F, measured using min/max. Operator noticed that the unit was running too high and kept their TCS products on ice. Informed PIC that the unit needs to be repaired so that TCS foods can be properly held at 41*F or below. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Corrective Action: Correct prior to re-inspection on 6/12/2026. Reinspected on 6/11/26, cold holding equipment ambient air measured 49F at its lowest using min/max thermometer. PIC reported colder temperatures measured earlier. PIC will continue to use other equipment and ice for TCS foods.

Observed boxes of floor cleaner, bottles of hand soap, degreaser, and other chemicals stored over multiple boxes of deli papers. Informed PIC that chemicals must be stored below any food, utensils, and single service items. All chemicals and single service items were properly stored at time of inspection. Chemicals must be stored away from food, utensils, and single service items at all times to prevent contamination. All chemicals were relocated and properly stored by PIC at time of inspection. Corrective Action: Corrected at time of inspection.
