Inspector's notes

Observed the time as a control log missing any additions since June. When asked, PIC stated they have been keeping up with the log, but they had been away and the other staff had not kept up with the log. Educated PIC that all rice kept under TAC must have logs maintained in order to safely use Time as a Control. All TCS foods being held under time as a control were properly time stamped at time of inspection. Time as a Public Health Control requires written procedures detailing process for Time as a Public Health Control and time-stamping for items actively held under Time as a Public Health Control. Corrected at time of inspection.

Inspector's notes

Observed an employee washing rice for cooking in the three-compartment sink. Educated PIC that all food prep must be conducted in the prep-sink to prevent food contamination. Corrected at time of inspection.

Inspector's notes

Observed a to-go bag filled with cooked chicken, on top of cooked steak, inside a hot holding well. Educated PIC that the use of non-food grade bags (including to-go bags and trash bags) is not approved for storage of open food items to prevent migration of deleterious substances. PIC discarded all contaminated food items at time of inspection. Corrected at time of inspection.

Inspector's notes

Observed a large amount of sugar sludge oozing from soda fountain outflow pipe and excessively collecting in the floor drain. Educated PIC that the physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Must clean physical facility prior to next routine inspection. Correct prior to next routine inspection.
