Discussed date marking non-TCS foods with PIC and was informed they no longer use these labels and have a written procedure instead. Instructed PIC to erase incorrect notation or remove cards altogether.

Observed wet wiping cloth sitting next to a sanitizer bucket near large floor mixer. All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations. Wiping cloths were placed in sanitizer buckets with approved sanitizer concentrations at time of inspection. Corrective Action: Corrected at time of inspection.
