Director of Operations, James C. emailed the department confirming that they reprogrammed all of the thawing cabinet units to the agreed setting of below 41 Deg. F until further notice on 03/20/2026. They are in communication with the department and thawing cabinet company to review the thawing procedures.

Inside of Electrolux thawing cabinet raw chicken measured an internal temperature of 62'F. Brought to attention of person in charge to move chicken in refrigeration under 41'F so that it could be cooled. TCS foods shall be held at 41'F or lower. Corrective Action: Corrected at time of inspection.

Inspector's notes

Establishment was observed thawing raw chicken is Electrolux thawing cabinets that were thawing at a temperature higher than 41'F. When thawing in refrigeration TCS products shall be kept under 41'F or thawed under a stream of cool water. A reinspection will be conducted within 10 days to ensure that current thawing process is discontinued and new thawing procedure is permitted within parameters of FDA Food Code. Corrective Action: Correct prior to re-inspection.
