#22 — Proper Cold Holding TemperaturesPriority3-501.16

PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. TCS foods found in food prep cooler in preparation area found at internal temperatures of 47*F - 52*F. After review of facility's temperature log sheet, it was found that foods had been in the danger zone for more than 4 hours. TCS foods (sliced tomatoes, cheese slices, pepperoni, lettuce, mozzarella cheese, 1000 island dressing, chicken patties, chicken fingers, cut celery & carrots, mayo, and hummus) in unit were embargoed (see embargo sheet). -------------- PIC had food employees remove TCS foods from unit and discard at time of inspection. After discussion with the person in charge, it has been determined that the root cause of the violation was training staff which resulted in the violation. Do not house TCS foods in unit until foods can be maintained at an internal temperature of 41*F or below. Correct By: Corrected At Time Of Inspection
