Observed menudo and cooked chili sauce in big 5-gallon canisters cooked two days ago inside low door fridge near register counter with an internal temperature of 54F. Also observed large double door reach in fridge with an internal temperature of 55F with food inside reaching between 41F to 45F. Internal fridge unit found to read 58F. Had person in charge discard menudo sauce and chili sauce at time of inspection as well as move TCS food from double reach in fridge to single reach in fridges for proper cooling. Corrective Action: Corrected at time of inspection.

Observed cooked carne asada and rice in baggies in main reach in fridge with internal temperature of 47F. Person in charge states that items were cooked earlier today at 3AM as well as yesterday. All TCS foods improperly cooled were discarded by PIC at time of inspection. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Corrective Action: Corrected at time of inspection.
