The inspector relocated the meatballs outside of hand sink basin at the time of inspection. Corrective Action: Corrected at time of inspection.

-- Observed package of meatballs sitting out at room temperature inside hand sink basin with an internal temperature of 76°F using probing thermometer. The PIC stated the meatballs were removed from the reach-in refrigerator and placed in basin approximately 3 hours prior to the inspection (5:30 AM). Advised the PIC that the meatballs will need to be discarded at the time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.

The PIC stated the eggs are for personal use and will not be served to daycare attendees. REMINDER: In facilities serving a highly susceptible population, raw shell eggs may only be used for hard boiling or as an ingredient in baking mix for shelf-stable products such as cakes, muffins, brownies, etc.

-- In reach-in refrigerator carton of unpasteurized shelled eggs were placed above ready-to-eat corn muffins. No visible contamination observed. Reviewed with PIC approved food storage. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Corrective Action: Correct prior to next routine inspection.
