Inspector's notes

Observed significant dried-on food residue on the food contact portion of the table-mounted can opener. Person in charge (PIC) was unsure when the can opener was last used. Food contact surfaces of time and temperature control for safety (TCS) foods must be washed, rinsed, and sanitized at least every 4 hours or as often as necessary to keep them clean to sight and touch. PIC moved can opener piece to 3-compartment sink to be cleaned. Corrective Action: Corrected at time of inspection.

Observed employees' personal box of cookies stored on a shelf above chicken tenders and lettuce in the walk-in refrigerator. Employee personal items must be stored in a dedicated area to prevent contamination of clean equipment or food. Also of note: observed an employee personal bottle of ibuprofen stored on a shelf over a meat slicer that was not being used. PIC directed an employee to discard the cookies. Corrective Action: Corrected at time of inspection.
