Inspector's notes

Observed chicken wings at 75F inside the walkin. Talked to staff that prepared the wings. Said they were removed from the oven at 1040am, and 6 hours later was at 75F. Talked to staff about cooling techniques and temperatures. Ensure that cooling foods go from 135F to 70F within 2 hours, and from 70F to below 41F within an additional 4 hours for 6 hours total. Manager embargoed the foods, see embargo list. Corrective Action: Corrected at time of inspection.
