Observed employee filling up a metal container of water from the hand sink by the walkin door. Observed white container of strawberry jam sitting in the basin of the back hand sink by the ice machine. Talked to manager about hand sink requirements. All the items were removed. Ensure that all hand sinks are open and accessible at all times. Corrective Action: Corrected at time of inspection.

Observed ground beef 52F, cut tomatoes 48F, cheese at 51F inside the undergrill fridge, open top fridges and island fridge respectively. Manager embargoed all TCS foods in those fridges for over 4 hours, moved recent items back to the walkin. Ensure that all TCS foods during cold holding are kept at 41F or less. See embargo form. Observed employee not washing hands after using the restroom and reentering kitchen, and before adding gloves. Observed employee at raw beef station, using the same gloves to touch finished onions and cheese and spatula shared with employees at finished food stations. Talked to staff about using the included over glove brand provided. Manager had employee wash hands and changed out shared utensils. Ensure that hand washing is occurring going from dirty to clean tasks in the kitchen. Corrective Action: Corrected at time of inspection.
