PIC stated the roast beef was in the unit since yesterday and voluntarily discarded - see embargo form. The fruit medley was placed in the unit right before inspection and was relocated to the walk-in to rapid cool. Corrective Action: Corrected at time of inspection.

PIC voluntarily discarded the deli meats and yogurts, see embargo form. Observed the prep cooler with an ambient air temperature of 45F; TCS foods will be stored in the walk-in cooler. Discussed regularly performing preventative maintenance on the refrigeration equipment to ensure that it can maintain 41F or below.
