In the refrigerated display case at the register, observed house made pickled products and pre-portioned dessert with no date mark. Person in charge (PIC) stated product was prepared Friday. In the drink cooler next to the front door, observed house made mango lassi, almond milk, rose milk and fruit puree containing cantaloupe with no date marking. PIC stated items prepared yesterday. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Discussed with PIC juice bottle labeling requirements including warning statement "WARNING: This product has not beenpasteurized and, therefore, may contain harmful bacteria that can cause serious illness in children, the elderly,and persons, with weakened immune systems." and "Best by" date. Discussed with PIC in use utensil storage for portioning containers at the cold table.

In the two door rech in under the cold table next to cooks line, observed raw chicken being stored above cooked potato. In the walk in cooler, observed raw shell eggs being stored above garlic. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Corrective Action: Corrected at time of inspection.
