Inspector's notes

Observed in the top of the prep table on the cookline to be with an internal ambient temperature of 47*F. Observed the chopped lettuce, tomato, and shredded cheese to be at temperatures of 41*F to 47*F. Per person in charge (PIC) all items were placed in the unit less than an hour prior to inspection. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Discussed with PIC except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

No County legal action will result from this inspection.Of Note: Discussed with Person in charge (PIC) 1) all products not going through the cooling process shall be covered with lids/plastic wrap to protect from contamination. 2) All single use items are not designed to be washed and reused. Reusable containers shall be used for all foods, seasonings, dried goods and sauces. 3) all items shall be 41*F or less going into the prep tables that open from the top and the front as it is designed to be adequate for cold holding and not cooling.
