Inspector's notes

Salsas at salsa bar found with internal temperatures of 40-55*F. The bottom portion of the salsas were coldest as the ice bath they were in only had the ice contacting the bottom of the pans they were stored in. The upper 80% of the salsa was above 41*F with the uppermost portion having temperatures of 48-55*F. PIC stated the salsa were placed in the bar about 1 hour ago at 8:00 AM today. More ice was added to the ice bath to fill to the top of the salsa containers. PIC will monitor the salsa to make sure it cools within the next 2 hours to 41*F or below. If the salsa is not cooled by then, it will be discarded. Cold held TCS food items must be maintained at 41*F or below. Corrective Action: Corrected at time of inspection.
