#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed sliced deli meat 45-48°F, sitting in a prep cooler across from the display case, cold holding above 41°F. The cold holding prep table measured 48.3°F with the min/max thermometer. Thermometers were calibrated onsite. Staff stated the deli meat had been in the prep table for less than 6 hours. Alerted the manager, who put a "do not use" sign on the prep table during the inspection. All TCS foods improperly cold held were relocated to an alternative functioning refrigeration unit to cool to 41°F at time of inspection. This cold holding unit is not on the fast alert system. The manager plans to have the unit fixed and then have staff either check food temperatures every 4 hours or add the unit to the fast alert system. Corrective Action: Corrected at time of inspection

Core-4-501.11, C: Good Repair and Proper Adjustment-Equipment Observed a cold holding unit, used for pick up orders, measuring 50.1°F with the min/max thermometer. The cold holding unit is only used for pick up foods, which are in the unit for less than 2 hours. All foods were moved to alternative refrigeration, at time of inspection. Management told staff to not use the cold holding unit until it is repaired and maintaining below 41°F. Establishment has adequate refrigeration to operate safely.
