Inspector's notes

Observed no chlorine (0ppm) being dispensed at dishwasher. According to PIC, dishes had been run in dishwasher prior. PIC relocated all food-contact surfaces to 3 comp to be washed, rinsed, and sanitized at the time of inspection. Informed PIC that chlorine concentration must be maintained from 50 - 100 ppm. All warewashing must take place at the 3-compartment sink until the dish washer is repaired. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed in house tomato spread and orange honey butter with no date marked. PIC was unsure when tomato spread was made. Orange honey butter was prepared beginning of July (More then 7 days prior). Per PIC, items are usually date marked when prepped, and are only held for approximately 3 days. Other TCS foods had dates marked at time of inspection. All RTE/TCS foods past 7 days of preparation were voluntarily discarded by PIC at the time of inspection. Informed PIC that RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Corrective Action: Corrected at time of inspection.
