Observed Ice bucket placed upside down on handwashing sink faucet. Informed PIC that handwashing sinks must be maintained so they are accessible at all times. PIC relocated all items blocking handwash sink at time of inspection. Corrective Action: Corrected at time of inspection.

Observed organic matter build up behind black panel inside ice machine. Ice machines need to be cleaned more frequently to prevent growth of organic matter. Informed PIC to increase cleaning frequency and that all food-contact surfaces must be cleaned to sight and touch. Corrective Action: Correct prior to next routine inspection.

#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed front reach in underneath cash register at 52*F per inspectors min/max. Per PIC, TCS foods such as pesto pasta and potato salad, were removed from original packaging, placed in new containers, and placed in reach in the night before. Internal temperature of products were at 45*F - 46*F. Informed PIC that except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were voluntarily discarded by PIC at time of inspection. Informed PIC to not store TCS foods in reach in until it can maintain a temperature of 41*F or below. Corrective Action: Corrected at time of inspection.
