Observed an employee place tongs being used to cook chicken in disposal chute on grill while grilling chicken. In-use utensils must be stored in a clean, dry location; in running water; or in hot water above 135°F. If utensils are stored in food, the handles must be stored above the surface of the food. PIC placed tongs in a bucket to be washed at time of inspection.

Observed wet wiping cloths stored in a quat concentration less than 150 ppm. Informed PIC that wet wiping cloths must be stored in an approved sanitizer concentration. Upon further inspection, the quat dispenser at the three-compartment is outputting less than 150 ppm. Informed PIC that they will need to hand dose quat or chlorine bleach into the buckets and test using the respective test strips to ensure that the cloths are sitting in an approved concentration. All wet wiping cloths were stored in proper concentrations at time of inspection. All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations. Wiping cloths were placed in sanitizer buckets with approved sanitizer concentrations at time of inspection. Corrective Action: Corrected at time of inspection.

Observed the atmospheric vacuum breaker AVB) at the mop sink to be leaking. Informed PIC that it should not be leaking and to have it serviced by a plumber or backflow specialist to ensure it is functioning properly. Observed the pipes for the spray nozzle at the front prep sink next to the flat top, leaking a heavy steady stream of water where the base meets the countertop. Water is draining onto the floor underneath and behind equipment. Informed PIC that the spray nozzle pipes need to be brought back into good repair. All plumbing must be maintained in good repair at all times. Must repair all plumbing to a state of good repair prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.
