#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed house-made ranch and blue cheese dressing in the bottom of the front most cold holding unit with an internal temperature of 52*F. The ambient air temperature of the unit was 49.2*F, measured using min/max thermometer. PIC stated that the ranch and blue cheese had been in the unit since one or two nights prior. Informed PIC that because the product has been in the unit longer than 4 hours, it needs to be discarded. PIC discarded the ranch and blue cheese at time of inspection. These items were embargoed. PIC agreed to not use the unit for TCS product until the unit can hold them at 41*F or below. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Remaining hand sinks have running hot water and are within the 25-foot requirement. PIC and employees agreed to discontinue use of front hand sink until it has running hot water.

Inspector's notes

Observed black organic matter in the inside of the soda machine nozzles. Informed PIC that this area needs to be cleaned and continue to be cleaned at a rate which precludes the accumulation of organic matter. PIC stated that they are cleaned and sanitized at the end of the day. All food-contact surfaces must be cleaned to sight and touch. Corrective Action: Correct prior to next routine inspection.

Per PIC, the deli slicer has been used daily, but not cleaned for 7 days prior to inspection. PIC washed, rinsed, and sanitized the deli slicer at the time of inspection. Discussed cleaning frequency with the PIC, specifically that equipment with food contact surfaces should be cleaned at least every 4 hours when in-use (or more frequently if contamination occurs).
