Observed in walk in cooler closest to cook line; raw black angus beef, raw ground beef, raw sliced bacon all in packaging stored above raw liquid whole eggs, raw liquid egg whites, and raw unpasteurized in shell eggs all in packaging. Observed no contamination of products. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. MCESD proper food storage order poster emailed to PIC. Corrective Action: Corrected at time of inspection.

Observed behind hot holding cabinets on cookline a not self contained snapping mouse trap on ground up against wall. PIC stated pest control was handled by the same company that does the building, recommend special instructions for food service area. PIC stated they will remove the trap prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.

Observed heat-treated pickled red onions prepared on 4/10, heat-treated pear and ginger compote prepared on 4/14,and rice pudding prepared on 4/28 (11 days ago). Informed PIC that all RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. Corrective Action: Corrected at time of inspection.
