In the handwashing sink on the cook line observed a large Cambro of bread stored in the basin of the handwashing sink. At the bar observed both bar handwashing sinks set up as dump sinks. Observed food debris from dumped drinks in the sink. Facilities must be maintained in a condition that promotes handwashing. Handwashing sinks may only be used for handwashing.

Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. According to the PIC all TCS foods had been out on the counter for 1-2 hours. Predefined Comment: All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Observed milk/50°F and heavy cream/51°F held in sliding door display refrigerator. Ambient temperature of bar refrigerator measured at 49.8°F with inspector's min/max thermometer. Discontinue use of refrigerator for storing TCS foods until it maintains 41°F or less. Milk and heavy cream were discarded. Corrective Action: Corrected at time of inspection.

Advised person in charge (PIC) that equipment, which food contact surfaces of time/temperature control for safety (TCS) foods, must cleaned every 4 hours during use and prior to storage. All food-contact surfaces must be cleaned to sight and touch. Food employee began cleaning the deli slicer at time of inspection. Corrective Action: Corrected at time of inspection.
