Observed employee crack raw shell eggs with cloth gloves underneath and nitrile single-use gloves on top, and then proceed to change the nitrile gloves and keep the cloth gloves on without handwashing, as he proceeded to package the food for consumers. Informed person in charge (PIC) that hands should be washed when changing tasks. PIC corrected at time of inspection. Corrective Action: Corrected at time of inspection.
