Observed cooked chicken(97°F, 93°F), cooked beef112°F, 119°F), cooked pork (85°F), cut lettuce(48°F), and roasted chilis (81°F) all in cooler with ice reporting above 41°F. PIC confirmed they had been put in there to cool overnight after being prepared on the unit. Cooling is not permitted on mobile units. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

The list of TCS foods and temperatures include cooked pork at 94°F, pre-packaged chimichangas at 60°F, raw shelled eggs at 70°F, refried beans at 53°F, salsa at 72°F, raw chicken cuts at 55°F, ranch at 77°F, shredded cheese at 71°F, sour cream at 63°F, raw beef at 62°F, cooked ground beef at 80°F, cooked beef cartilage at 77°F, beans and meat combo at 72°F, breaded chicken patties at 59°F, sliced cheese at 68°F, sausage at 65°F, sliced deli ham at 60°F, sliced lettuce at 61°F, hotdogs at 71°F, and bacon wrapped hot dogs at 72°F. Person in Charge (PIC) was unable to provide a time for when refrigeration had been turned off and foods were left in the truck. Except during preparation, cooking, or when time is used as a control all TCS foods must be maintained at 41°F or below.
