Discussed that all hand sinks must always be available and used for no other purpose than handwashing. The manager removed the obstructing items at the time of inspection. PIC stated the chicken and beef patties had been cooked from raw on the grill 1 hour prior and placed into the steamer. PIC stated the dog dogs were reheated on the grill approximately 30 minutes prior. Except during preparation, cooking, cooling, or when time is used as a control hot held TCS foods are to be maintained at 135*F or above. PIC stated the steam table may have been warming up at the time when TCS foods were placed in the unit for hot holding. Advised PIC to bring the steam table up to temp prior to hot holding to ensure all foods remain above 135*F. PIC had all out-of-temperature foods reheated to 165*F fro 15 seconds at the time of inspection. Correct By: Corrected At Time Of Inspection
