Inspector's notes

Observed main cold holding unit holding at 58 degrees Fahrenheit at time of inspection. After opening door to measure temperature, door would not close unless repeatedly and forcefully shut by inspector causing cool air to leach out. All cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. On-site Mechanic confirmed engine of truck had fallen into disrepair ad was no longer able to operator or power equipment until new motor was required. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Corrective Action: Correct prior to re-inspection by 6/20/25.

Observed numerous flying insects moving around cabin upon entry and moving in and out of storage spaces. Establishment must be maintained free of pests and all pest control measures must be conducted by a licensed pest control specialist. Must eliminate current pest control problem and obtain pest control from a certified and licensed pest control specialist by re-inspection. Corrective Action: Correct prior to re-inspection by 6/20/25. 6-501.112 - Core: Removing Dead or Trapped Birds, Insects, Rodents and other Pests Addl Notes: Observed clusters of small insects collected across bottom of basins of 3 compartment sink. Per 2017 FDA food code, Operators must remove dead or trapped creatures promptly to reduce the attraction of insects and development of odors. Being that the insects present may serve as contact vectors of food borne illness, it is important that sinks are cleaned, sanitized and free of debris by next inspection. Corrective Action: Correct prior to next routine inspection. 6-501.111 (C) - Priority Foundation: Controlling Pests; Approved Trapping Methods/Existence Addl Notes: Observed glue trap for the purpose of trapping pests located beneath 3 compartment sink.
