observed on site utilize open bag of shrededd taco cheese, placed on the service counters. temperature was taken, recorded 59-65 deg f . discussed with manager strategies to maintain tcs food at 41 deg f . suggested ytilizing a smaller metal pan with a lids in an ice bath. also reciewed relocating the shreded cheese open bag and utizing ice bags surrounding the open tcs to ensure 41 deg f established and maintained. manager removed cheese, placed in the food cooler and covered with ice backs. Corrective Action: Corrected at time of inspection.
