-- Multiple large items such as storage bins and a mini refrigerator placed on the floor of truck, which was preventing easy access to handwash sink. Discussed with the person in charge ensuring the hand sink remains free, clear, and easily accessible at all times to promote/encourage frequent handwashing. The PIC relocated all items blocking handwash sink at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

-- Observed sausage and peppers with marinara sauce on stove with an internal temperature of 115°F using probing thermometer. The person in charge stated the peppers have been holding on the stove for approximately 1 hour. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Corrective Action: Corrected at time of inspection.
