Observed dicer underneath prep area with food debris on and around the blade. Asked Person in charge (PIC) when it was used last. PIC stated it was used to prep potatoes for yesterday and has not had time to clean it. All food-contact surfaces must be cleaned to sight and touch. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Corrective Action: Corrected at time of inspection.

Observed cooked hamburgers/125F, french fries/92F, and cheese sauce/101F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Per PIC, foods were all within safe time holding parameters. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Adjustments made to temperature holding equipment. Corrective Action: Corrected at time of inspection.

PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code.
