Observed house made salsas/56°F stored in condiment containers on the counter near the front window. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. After discussion with the person in charge it was determined the salsa was removed from temperature control an hour ago. Instructed PIC to return TCS to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection, or utilize 4 hour TPHC if salsa is held outside of cold holding. Corrective Action: Corrected at time of inspection.

Operator confirmed beans had been made at commissary and set to cool around 7am and had not finished cooling when they were placed in reach in refrigerator for event. Cooling is not permitted on mobile units. Operator reheated beans to 165°F for service at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
