At the time of inspection, therice in the rice cooker was holding at 129*F, not 135*F as required. Per person in charge, the rice was placed in the rice cooker approximately 1 hour earlier to hold hot, but the cooker was not plugged in. The person in charge placed the rice on the flat-top to reheat properly to 165*F prior to returning to hold hot. Ensure time/temperature-controlled safety foods are held hot at 135*F at all times.
