Observed cole slaw tub in fridge at 45°F and small cole slaw container on service assembly counter at 57°F. Per PIC, large cole slaw tub had been removed from fridge to portion out into plastic container just before inspection and food items had been on the unit since about 3pm. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. PIC moved items to ice baths for rapidly cooling to satisfy requirements and was also educated about option to use Time as a Control for future events. Corrective Action: Corrected at time of inspection.

Inspector's notes

Mobile unit was observed to have 2 unscreened service windows larger than the allowed 18" x 18" maximum area for a Type 3 Mobile unit. The Patio that housed the smoker was also unscreened and open air, allowing flies to enter through the main door as well as the windows. All openings for the unit must be of proper size , and all food prep areas should be protected from exterior contaminants such as weather, animals, and dust. Informed operator that the unit was not up to code and was given owner's contact information in order to coordinate corrections. Corrective Action: Correct prior to next routine inspection.
