2ND CONSECUTIVE VIOLATION The mobile food unit does not have commissary logs available. According to PIC, food is received daily and the waste water is emptied at the commissary. Discussed keeping and maintaining the daily logs. Corrective Action: Correct prior to next routine inspection. MCEHC Chap. 8, Sec. 3, Reg. 5c - Mobile food establishments shall provide a commissary agreement to the Department upon request, at permit issuance or renewal, and as a part of the documents submitted during plan review for a new permit. Ice cream vendors that only sell or dispense individually packaged, commercially processed items are exempt from providing a commissary agreement. Addl Notes: The mobile food unit does not have a copy of the current commissary agreement available. The most recent agreement is dated 8/27/2024. Please provide a current commissary agreement within 10 days. Corrective Action: Correct prior to re-inspection.

Also observed raw bacon stored above cooked pinto beans in the reach-in unit. Operator placed the raw chorizo and raw bacon on the bottom shelf of the standing fridge at time of inspection.
