Observed two deep metal cambros of cooked carne asada (65-71'F) being stored in a white standing refrigerator in the front service area. Per PIC, the carne asada was cooked and placed in the refrigerator to cool about 10 hours prior to inspection. Discussed proper cooling techniques with PIC. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. All TCS foods improperly cooled were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Per PIC, both food items were cooked and placed in the walk-in more than 6 hours prior to the inspection. Observed both items placed in the walk-in to be lidded in deep containers. Both items were embargoed at the time of inspection. Discussed proper cooling with the PIC. Foods must be cooled (uncovered in shallow pans) from 135'F-70'F in the first 2 hours and from 70'F-41'F in the next 4 hours for a total of 6 hours. Provided cooling handout to the PIC. All food items were lidded at time of inspection. All other TCS foods were at 41'F or below at the time of inspection. All other non-TCS food items were at 41'F or below at the time of inspection. The ambient minimum air temperature was measured to be 39.6'F at the time of inspection. Per PIC, all items were placed in the refrigerators the day prior to inspection.
