Inspector's notes

Observed a pan of shredded red chili pork with an internal temperature as measured using a probe thermometer of 130°F sitting in the hot well. Per the person in charge, the food had been in the hot well for more than 2 hours and was embargoed at time of inspection (see embargo form). In discussion with the person in charge, it was determined that the unit had not been preheated prior to holding the food in the unit and also they did not have enough water in the unit when the put the food in the hot well. Discussed with person in charge to ensure that the hot well is preheated and filled with water prior to putting the food in the hot well. Other foods in the hot well such as cooked steak and cooked rice had internal temperatures as measured using a probe thermometer of between 155°F - 161°F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Corrective Action: Corrected at time of inspection.
